I love serving this as an easy Saturday lunch with homemade creamy tzatziki and a classic rocket, pear and parmesan salad.
This Spanish-style omelette (or tortilla) is delicious eaten hot, at room temp or cold. It's also a fab way to pimp up your grazing boards when entertaining - just cut up in cubes and enjoy with a lovely glass of Rioja. Yum!
