Very Nice Veggie Slice

This is another great recipe for using up lots of leftover veggies in the fridge and it's super versatile - it can be eaten hot, warm or cold; as a light meal, afternoon snack and/or lunchbox filler. I love serving this as an easy Saturday lunch with homemade creamy tzatziki  and a classic rocket, pear and parmesan salad.

Spanish Omelette

This Spanish-style omelette (or tortilla) is delicious eaten hot, at room temp or cold. It's also a fab way to pimp up your grazing boards when entertaining - just cut up in cubes and enjoy with a lovely glass of Rioja. Yum!

Just Aperol With It

In the event that I feel like treating myself to a fancy beverage - an Aperol Spritz really does come up trumps. For one thing, I always have a bottle of Aperol stored in the pantry and sparkling mineral water is a staple in our household.
